Instructions:
1. In a medium pot over high heat, add oil and saut mirepoix for 4 minutes.
2. Add chicken and brown for an additional minute.
3. Add applesauce, Masala Simmer Sauce, and tomato. Bring to a boil and simmer for 5 minutes.  Meanwhile prepare frozen rice according to package instructions (3 minutes in microwave).
4. Take out  cup of soup and slowly stir into yogurt (this will temper the yogurt) and then add mixture back into soup, stirring well.  This soup is meant to be thick, but if youd like it thinner, add water or broth.
5. Place a scoop of rice in each bowl, add soup, and top with a little more rice.
